ABOUT Flavoured Coconut milk rice RECIPE

A very unique aromatic Indian basmati rice dish accompanied with gentle flavour of coconut milk and Indian spices. A bowl of Flavoured Coconut milk rice will release cultivating aroma of Indian spices.

Ingredients Serving: 2

  1. Basmati Rice - 200 grams
  2. Coconut Milk - 150 millilitre
  3. Hot water - 250 millilitre
  4. Cinnamon sticks - 3 in number
  5. Star anise - 2 in number
  6. Bay leaf - 2 in number
  7. Peppercorns - 5 to 6 in number
  8. Cumin Seeds - 1 teaspoon
  9. Green capsicum - 1 in number sliced.
  10. Green peas - 1/4 cup
  11. Oil - 2 tablespoon
  12. Pepper - to taste
  13. Salt - to taste

Instructions

  1. Heat oil in a cooking vessel, add the whole spices like cinnamon, cardamom, star anise, bay leaf, cumin and peppercorns and let the flavours infuse.
  2. Add the capsicum and continue to saute.
  3. Add the soaked Basmati Rice and saute for 2 mins.
  4. Now add the coconut milk, green peas and water. Stir and continue to cook on high heat with a covered lid for 3 to 4 mins. Add salt and pepper to taste.
  5. Continue on slow heat till the Basmati Rice is cooked.
  6. This is a flavourful dish. Serve hot, along with your favourite curry.
