Ingredients Serving: 2

  1. Onion 2 medium sized - sliced
  2. Cinnamon stick - 2 medium sized
  3. Cardamom - 4
  4. Star anise - 2
  5. Saffron - 2 pinch
  6. Milk - 2 tablespoon - 30 millilitre approximately
  7. Cashews - 25 grams
  8. Raisins - 15 grams
  9. Walnuts - 20 grams
  10. Almonds - 20 grams - soaked overnight and skinned
  11. Pineapple slices - 2
  12. Pepper - 1 teaspoon
  13. Sugar - 12 teaspoon
  14. Pure ghee - 1 tablespoon
  15. Oil - 2 teaspoon
  16. Salt - to taste
  17. Hot water - 370 millilitre

Instructions

  1. Fry the chopped and sliced dry fruits(cashews, raisins, walnuts and almonds) in 1 tablespoon ghee and keep aside.
  2. Grill the sliced pineapple over a grill plate and cut into small bite sized pieces and keep aside.
  3. Soak the saffron in the warm milk and keep aside.
  4. Take the remaining ghee and add the oil to it In a cooking vessel.
  5. Add the spices cinnamon, cardamom, star anise and fry till the flavors are infused.
  6. Add the sliced onions and 1/2 teaspoon sugar and fry till light golden brown (caramelized).
  7. Add the soaked Basmati Rice and fry for 2 minutes.
  8. Now add the soaked saffron in milk and mix well.
  9. Add the hot water and the salt and pepper.
  10. Cover the vessel with a lid on high heat for 3 minutes, than lower the heat to medium and cook till the Basmati Rice is done.
  11. Garnish with the grilled pineapple. Other garnish options could be grilled figs, or dry fruits like peaches.
