About Healthy Cups Recipe

I would not say that the recipe is invented by me as there are different ways people already make cucumber cups. But, I would definitely say that this recipe originated out of need. My friend and me were fasting for Navratras and like all modern vratis, we thought of ditching regular fried food. So, here is my version of quick and yummy treat that is good to eat even when you are fasting!

Ingredients to make Healthy Cups

  • A long cucumber - cut into big 4 pieces
  • Thick curd - 2 tbsp
  • Crumbled paneer - 1 tbsp
  • Black pepper as per taste
  • Salt and chopped coriander to taste
  • Crushed mint leaves (dry) - 1/2 tsp

How to make Healthy Cups

  1. Hollow the pieces of cucumber, saving the base. Remove the cucumber juice and pulp from the cups.
  2. Mix or blend curd and paneer together.
  3. You will get a grainy mixture. Add all the other ingredients to it and mix well.
  4. Fill the mixture in the cucumber cups and chill for around 2 minutes.
  5. Enjoy the cool cucumber relish!

My Tip:

You can experiment with the filling by putting cheese spread or sour cream instead of paneer and curd dip. This dish can be served as a side dish/appetizers/salad.
