Seafood one Pot Rice

Ingredients to make Seafood one Pot Rice

  • Basmati Rice - 200 gm or 1 cup (as per US RATIO). (rinsed twice and soaked for 20 mins).
  • Prawns - 6 - 7 pc
  • Squid - 6 to 7 slices
  • Shellfish/mussels - 10 - 12 pc
  • Shelled crab,Lobster - optional
  • Garlic - 5 - 6 nos chopped
  • Onion - 2 nos chopped
  • Tomato puree -1 can or 100 ml
  • Paprika powder - 1 tsp.
  • Worcestershire sauce - 3 tsp
  • Pepper powder - 1 tsp
  • Chilly flakes - 1 tsp
  • Bay leaf - 2 nos
  • Salt to taste.
  • Chicken stock - 2 1/2 cup
  • Oil - 2 tbsp

How to make Seafood one Pot Rice

  1. Heat oil in a cooking vessel, add the garlic and chopped onions. Saute till translucent.
  2. Add the tomato puree, worcestershire sauce, paprika powder, chilly flakes, pepper powder, bay leaf and continue to saute.
  3. Add the Basmati Rice and saute for 2-3 mins.
  4. Add the prawns and shellfish and stir.
  5. Now add the chicken stock and salt to taste.
  6. Continue to cook the Basmati Rice on high heat for 2-3 mins and than reduce heat to simmer and cook until the water is absorbed and the Basmati Rice is cooked.
  7. Serve hot with a sprig of cilantro or coriander.
