ABOUT HAKURU CAKE RECIPE

HAKURU CAKE (OVEN / NO OVEN) A healthy wholesome cake that would definitely be a hit among mother who want their kids to eat healthy. HAKURU in Sinhalese means Jaggery, hence tha name. So let us make A healthy cake which has NO MAIDA NO BUTTER NO SUGAR NO EGGS & above all NO OVEN

Ingredients Serving: 8

  1. 1 cup Wheat Flour
  2. 1/4 cup Semolina/Rawa
  3. 1 teaspoon baking powder
  4. 1/4 teaspoon Baking Soda
  5. 3/4 cup grated jaggery
  6. 5 tablespoon oil
  7. 1 tsp vanilla essence
  8. 1 cup warm milk.

Instructions

  1. Preheat the oven to 160C for 10 minutes. *** For no oven recipe add 2 cups of refined/rock salt at the base of a pot/degh. Keep a small wire mesh on the salt, cover and heat on a medium flame.
  2. Grease the cake mould with butter/oil and set aside.
  3. In a mixing bowl take jaggery, oil and milk. Whisk until jaggery dissolves.
  4. To this add vanilla essence and mix well.
  5. Sift together wheat flour, rawa, baking powder and baking soda.
  6. Mix the wet ingredients & dry ingredients, blend using a whisk or by spatula using cut n fold method.
  7. Adjust the consistency using 1-2 tablespoon milk
  8. Transfer the batter into cake mould , tap the mould lightly twice and keep the cake mould in the pot. Cover and bake for 45-50 minutes or until a toothpick insert ed in the centre comes out clean.
  9. Else bake in oven at 160C for about 30-35 minutes, depending on your oven.
  10. If a toothpick inserted in the centre of the cake comes out clean means it's done.
  11. Let this rest in the oven for about 10 minutes and then allow it to cool further on a wire rack for 10 minutes.
  12. Demould and serve.
