Ingredients to make Cream of Spinach soup (Dash of cream)

  • Spinach Puree(chopped & Blanched) 2 cup
  • Oats (roasted & powder) 2 tbsp
  • Olive oil/Butter 4 tsp
  • Salt to taste
  • Black Pepper to taste
  • Crushed red pepper 1/2 tsp
  • Oregano flakes - a pinch (optional)
  • Onion powder 1 tsp
  • Garlic powder 1/2 tsp
  • Low-fat milk or any Milk 1/2 Cup

How to make Cream of Spinach soup (Dash of cream)

  1. Wash, chop and blanch the spinach properly. Don't throw away the water. Make a smooth paste using a blender. Keep aside.
  2. Heat a pan, add oil, onion powder, garlic powder and saute on low heat. Add oats flour, saute properly. Add milk, stir continuously as there should be no lumps.
  3. Once the milk boils, add the pureed spinach. Stir properly. Add salt and pepper as per taste.
  4. Add the spinach blanched water as per the desired consistency. Serve in a bowl/ cup adding a dash of cream (optional). Cream of Spinach soup is ready to served.

My Tip:

Instead of onion and Garlic powder you can use fresh onion and garlic too. Add oregano, flakes/crushed red pepper for an enhanced flavor.
