Ingredients to make Mango Sorbet Dreamsicle !

  • 3 nos : Mango
  • 1/4 cup : Pineapple juice
  • 1 Cup : Sugar
  • 1/2 cup : water
  • 1/8 tsp : salt
  • 200 gm : Vanilla ice cream
  • Mint leaves (for garnish,optional)
  • Berries(for garnish, optional)

How to make Mango Sorbet Dreamsicle !

  1. Pour sugar into a sauce pan,add water and Bring the mixture to a simmer over medium heat.
  2. Once melted turn down the heat and simmer for few minutes to slightly thicken the syrup.
  3. Transfer to a heat proof bowl to cool the syrup.
  4. Peel and chop mangos and place in a food processor. Add pineapple juice and salt. Puree until the mangos become a smooth puree.
  5. Add the simple syrup and process until there are no lumps of mango.
  6. Pour mango puree into an ice cream freezer and process as per instructions. Pour into a freezer proof bowl and freeze.
  7. I lined it with cling wrap as it is easy to un mould.
  8. As the mango sorbet sets scoop the vanilla ice cream on to it and level it's surface.
  9. Freeze it for another 6 to 8 hours until completely set.
  10. Cut the frozen sorbet into slices with a hot knife. Dip the knife in hot water and wipe clean between each slice.
  11. Garnish with berries and mint leaves. Serve chilled.
