Mango Ravioli with Kiwi pesto

Ingredients to make Mango Ravioli with Kiwi pesto

  • mango 1 piece
  • Kiwi 1 piece
  • lemon juice 1/16 tsp
  • cream cheese 2 tbsp
  • Vanilla bean paste 1/4 tsp
  • Roasted cashew 1 tsp
  • mint leaves few
  • Beetroot
  • Pinch of salt

How to make Mango Ravioli with Kiwi pesto

  1. Use a sharp knife and cut slices of mango.
  2. Use a round cookie cutter and cut discs from the mango slices.
  3. In a bowl, mix cream cheese and vanilla bean paste.
  4. Chop the roasted cashews.
  5. In a blender, pulse the chopped Kiwi with a dash of lemon and a few mint leaves. It should have a sauce-like consistency.
  6. Cut beetroot into julians.
  7. Place a disc of mango.
  8. Pipe cream cheese mix on top and add a few cashews.
  9. Place another disc of mango and seal.
  10. Pour a little kiwi pesto sauce on the top and on the side.
  11. Add the beetroot with a dash of lime and a pinch of salt.
  12. Add cashews and mint leaves to the salad.
