About Burnt Garlic and Mushroom Fried Rice with Sunny side up Egg infused in Chilly Oil. Recipe

My last experience with burnt garlic in pizza was awesome. So wanted to try something more with burnt garlic.This fried rice is quick to prepare and hardly needs an elaborate recipe or ingredients. Best accompanied with sunny side up egg prepared in chilly infused oil. Just perfect for cold winter days.

Burnt Garlic and Mushroom Fried Rice with Sunny side up Egg infused in Chilly Oil.

Ingredients to make Burnt Garlic and Mushroom Fried Rice with Sunny side up Egg infused in Chilly Oil.

  • Cooked rice - 2 cups
  • garlic cloves - 10
  • mushroom - 6
  • Soy sauce - 2 to 3 tspn
  • Hot chilly sauce - 2tspn
  • vinegar - 1tspn
  • salt according to taste
  • Coriander leaves / spring onion slices - for garnish
  • For the egg
  • egg - 1
  • Red chilly - 1
  • salt
  • pepper powder

How to make Burnt Garlic and Mushroom Fried Rice with Sunny side up Egg infused in Chilly Oil.

  1. Heat oil in a wok or large frying pan, add finely chopped garlic and toss over medium heat ensuring you roast it to light golden colour. Do not burn it excessively.
  2. Add mushroom slices and toss well. To this add soy sauce, hot chilly sauce, vinegar and salt.
  3. Add cooked rice and toss well. Cook on low flame for few minutes. Garnish with finely chopped spring onion or coriander leaves.
  4. In the mean time, in a frying pan add few spoons of oil and once oil is hot drop the red chilly. Reduce flame. Once you get the aroma of chilly from oil, separate the chilly.
  5. Carefully break the egg in chilly infused oil and cook till white portion of egg is fully cooked. Sprinkle some salt, chilly powder and pepper powder.
  6. Transfer on the fried rice. Serve hot and enjoy.

My Tip:

Note: Spices and ingredients can be varied according to one's choice. Cooked cold rice works best for preparing fried rice.
