ABOUT Bhindi Masala / Okra Spice Curry RECIPE

This is a yummy recipe that i have created in my kitchen.

Ingredients Serving: 6

  1. 800 Gms Okra/ Bhindi (Tender ones)
  2. 6 Onions, chopped
  3. 5 Tomatoes, chopped
  4. 10 ml Fresh cream
  5. 10 Peppercorns
  6. 3 tsp Jeera/ cumin
  7. 1 tsp Garam masala
  8. 1 tsp Rasam powder
  9. 1 tsp Ginger garlic paste
  10. 3 Dry red chillies
  11. 12 Cashews
  12. 15 Almonds
  13. 1/4 tsp Haldi/ turmeric
  14. Handful of coriander leaves
  15. Salt to Taste

Instructions

  1. Wash and cut the Okra/ Bhindi and keep it aside.
  2. Heat 1 tsp oil in a wok. Add 2 tsp jeera, pepper corns, turmeric/haldi and ginger garlic paste. Roast them for a few seconds, then add the red chillies, chopped onions and coriander.
  3. Roast till the onions turn slightly brown. Then add chopped tomatoes,rasam powder, cashews and almonds. Roast all the ingredients till the tomatoes turn mushy. Then allow this mixture to cool and blend to a fine paste.
  4. Heat a tsp of oil in the same wok. Add 1 tsp of jeera/ cumin seeds. Add in bhindi and roast it well.
  5. Make sure that it does not burn. Then add garam masala and salt to taste. Mix it well together. ( I roast it till they are slightly crunchy and not soggy, approximately 20 minutes)
  6. Add the ground masala and let it simmer for 10 minutes on a low flame. Add fresh cream, mix well and switch off the stove.
  7. Garnish with fresh coriander and serve hot with rotis or phulkas.

Very nice recipe. I used sambar powder since I didn't have rasam powder.
