ABOUT SHYAM SAVERA PURIS RECIPE

Spinach/Palak dough on one side and yellow dough on the other makes an attractive TWO tone puri and the addition of spinach makes it healthy as well. Definitely a conversation starter/icebreaker at parties.

Ingredients Serving: 12

  1. For Spinach/Green/Shyam dough-
  2. 3-4 cups chopped spinach
  3. 1/2 to 1 inch piece ginger
  4. 1-3 green chilies
  5. salt as per taste
  6. 1/4 cup water, or as needed to grind,don't add too much
  7. 2 cups Atta/whole wheat
  8. Water as needed for binding dough
  9. For Yellow dough-
  10. 2 cups Atta/whole wheat flour
  11. 1/2 tsp Turmeric
  12. salt as needed
  13. water for binding dough
  14. Oil for frying

Instructions

  1. For Spinach/Green dough-
  2. Puree Spinach,salt,ginger and Green chilies.
  3. Mix with Atta/whole wheat and make into a tight yet pliable dough.
  4. Cover and leave aside for minimum 30 minutes.
  5. For Yellow/Savera dough Make a tight yet pliable dough with Atta,haldi,salt and water and leave aside for 20-30 minutes.
  6. Make equal size balls of Green/Shyam and Yellow/Savera dough. Place one on top of the other and press gently.
  7. Roll it out into a disc shape and fry till done and crisp on both sides.
