Ingredients to make Kankoda nu shaak

  • 7-8 nos. Spine gourd/kankoda
  • 3 tbsp oil
  • 1 tsp mustard seeds(Rai)
  • 1 tsp cumin seeds(jeera)
  • 1 tsp garlic paste
  • 1/4 tsp asafoetida(hing)
  • 1/2 tsp turmeric powder (haldi)
  • 1 tsp red chilly powder ( mirchi )
  • 1tsp cumin coriander powder ( daniya jeera powder )
  • salt to taste

How to make Kankoda nu shaak

  1. Wash kankoda in running water properly.
  2. Then cut it into thin slices.
  3. Now heat oil in kadai and add mustard seeds.
  4. When mustard seeds start crackling add cumin seeds and then hing.
  5. Add Garlic and saute.
  6. Add kankoda slice to it and mix well.
  7. Add salt and turmeric powder and mix it.
  8. Cover It With lid and cook it for few minutes on medium heat until kankoda are tender.
  9. Stir every few minutes to cook evenly and prevent burning.
  10. After kankoda almost cooked Add redchilly powder and cumin coriander powder and mix well.
  11. Let it cook for another 2-3 minutes in law flame to mix all flavours in it.
  12. Then switched off the gas.
  13. Serve hot with rotli or bhakhri.
