ABOUT Aam Kachori. ( Tastes Heavenly Delish) RECIPE

It's Heavenly Amazing are the words flashed in my mind as I tasted my first Aam Kachori. It was very difficult to control my temptation to eat the filling of Kachori just like that. The nice aroma while I was making filling forced my neighbours to ask me " Is there some special Sweets are you making ?"

Ingredients Serving: 3

  1. Mango juice of 2 mangoes. ( 600 to 700 grams mangoes)
  2. Homemade Paneer 3/4 Cup
  3. Wheat flour / All purpose flour 1 1/2 cup.
  4. Pure Ghee/ Clarified butter 4 tbsp
  5. Coconut grated ( fresh or dried) 1/2 cup
  6. Sugar 1/2 cup ( use according to the sweetness of mangoes)
  7. Roasted sesame seeds 2 tbsp
  8. Pomegranate seeds 1/4 cup
  9. Cinnamon Powder 1/ tsp
  10. Cardemom powder 1/4 tsp
  11. salt 1/4 tsp
  12. Oil for frying. 1 cup.

Instructions

  1. Take wheat flour in a plate. Add Zeera ( Cumin), just rub it between your palm before adding.
  2. Add 1 tbsp ghee. Knead flour by adding Mango juice. Don't add any water.
  3. Cover it and keep aside.
  4. Now we will Crumble the Paneer. Heat a pan. Add 1 tbsp ghee add Paneer. Saute a little.
  5. Add 3 tbsp of sugar. Mix well. After sugar melts add Mango pulp.
  6. After mixture dries a little add a pinch of salt. Add grated Coconut. Check the sweetness.
  7. You can add powdered Sugar at this time.
  8. Turn off the gas and allow the mixture to cool. After it cools add Cardemom powder and Cinnamon powder.
  9. Add roasted Sesame seeds and Pomegranate seeds.
  10. Your filling is now ready.
  11. Make small balls of the flour. And cover them not to dry.
  12. Heat the oil / vegetable ghee in a pan. Add rest 2 tbsp of ghee to it. This will give a nice flavour to your oil.
  13. Roll a Poori, add Stuffing in the center. Make a Kachori and deep fry till golden brown.
  14. Transfer on an absorbant paper.
  15. Your Heavenly Aam Kachoris are ready to serve.
