Add the 1 tsp sugar to warm water and mix. Add yeast in this and leave aside for 10 minutes.
Take flour in a bowl, add salt and remaining sugar. Add the yeast mixture, soft butter and mix lightly.
Pour mango puree little by little and a make a sticky dough.
Sprinkle flour on a work surface and take out the dough. Knead for at least 10 minutes. Oil the bowl and dough, cover with cling film and keep in a warm place for an hour or hour an half.
Take out on counter and punch down the dough. Knead again for another 10 minutes.
Make bun shape and keep on a greased baking tray. Leave for half an hour for second proofing.
Preheat oven at 180 C
Bake the buns for 14 minutes. Or as per your oven temperature. They won't become very brown so avoid baking for long. Take out the buns a minute before time and brush with butter. Put back in the oven for the last one minute.
Take out of the oven and cover the buns with a moist kitchen towel. Just wrap over the baking tray. Leave for half an hour. This step is optional.
Serve warm or at room temperature.
