ABOUT Mango Brandy Chicken RECIPE

A new recipe from my kitchen. Chicken is brined overnight with brandy and mango juice along with crushed ginger garlic, chilly flakes and cracked peppercorns. Then Chicken is roasted with herbs along with the brine untill the brine is reduced to a thick sauce. Explore the recipe.

Ingredients Serving: 3

  1. Chicken - 300 gms 
  2. Brandy - 30 ml
  3. Mango puree - ¼ cup
  4. Ice cold Water - 2 cups 
  5. Garlic - 4 cloves crushed 
  6. Ginger - ½ inch crushed 
  7. Chilly flakes - 1 tbsp 
  8. Cracked peppercorns - 1 tsp 
  9. Vinegar - 1 tsp 
  10. Rosemary and thyme - ½ tsp 
  11. Oregano - ¼ tsp 
  12. Salt to taste
  13. Oil - 2 tbsp

Instructions

  1. In a bowl add the brandy, mango puree, ice cold water, ginger, garlic, chilly flakes, peppercorns and salt to taste. Stir nicely and add the chicken and keep refrigerated overnight. 
  2. Remove the chicken from the brine. Keep aside the brine.  Heat oil in a pan. Layer the chicken in single layer and roast them in low heat flipping them over occasionally for about 10 mins. 
  3. Pour the brine over the chicken and add the vinegar, rosemary, thyme and the oregano. Cover the pan and cook on low-medium heat till the brine has reduce to thick sauce like consistency. 
  4. Remove from heat and serve the chicken with the sauce.
