Ingredients Serving: 10

  1. 55g Almond flour
  2. 100g Icing sugar
  3. 25g sugar
  4. 50g Egg whites ( at room temperature)
  5. Drop of Yellow food coloring
  6. For Filling:
  7. 50 gm butter
  8. 100 gm powder sugar
  9. 3-4 tbsp mango puree/ chunks

Instructions

  1. Beat egg whites on low speed in a medium mixing bowl until it reaches soft peaks. Turn the mixer on high speed, gradually add caster sugar and beat until it reaches stiff peaks and becomes shiny.
  2. Add drop of yellow food coloring and mix in.
  3. Sift the almond flour and icing sugar over the meringue.
  4. Fill this batter into a piping bag and slowly pipe the round Macaron on lined baking tray.
  5. Gently tap your baking sheets on your bench top to remove any extra bubbles from your piped shells.
  6. Leave Macaron on in a dry area to dry for about an hour, so that when you press the surface it is dry and not sticky.
  7. Preheat your oven to 120°C.
  8. Bake for 10-15 minutes, depending on the size of your shells.
  9. Remove from the oven and cool on the tray for a few minutes, then gently remove from the sheet and place on a wire rack to cool completely.
  10. For filling: In a bowl add butter, sugar and mango chunks. Whisk with the electric whisker till smooth.
  11. Assembling the macarons: Pipe some mango butter cream on Macaron
  12. Place the another macaron on top and press gently.
  13. Macaron are ready
