ABOUT Mangola salad RECIPE

A rustic and robust combination of raw and ripe mangoes. The salad is an Indian version of the Thai raw mango salad.

Ingredients Serving: 4

  1. 2 raw mangoes
  2. 1 ripe mango
  3. 1 Onion
  4. 1 tsp small rai
  5. 4 red chilies
  6. 15 curry leaves
  7. 8-9 basil leaves
  8. 2 tbsp Sugar
  9. 1/4 cup water
  10. 1 tsp groundnut oil
  11. 15-20 groundnuts
  12. 1/2 tsp black salt
  13. Pinch of Black pepper
  14. Salt to taste

Instructions

  1. Peel and cut the mangoes length wise, finely chop the onions and put the onion in an ice bath.
  2. Coarsely chop the curry leaves. In a small frying pan add the oil and saute the peanuts or groundnuts. Fine chop the fry red chilies
  3. Now in the same pan add the Rai or mustard seeds, now add the curry leaves, add the red chillies and dry for about 30 seconds.
  4. Add the water, black salt, sugar, black pepper and boil for one minute. Now check the seasoning and adjust salt.
  5. In a bowl add the raw sliced mangoes first, now add the mixture from the pan and mix well.
  6. Now add the ripe mango slices and the onions, mix well and finely add the onions after draining them well.
  7. Add the peanuts or groundnuts and mix well.
  8. Pair it with any Asian cuisine and enjoy
