Ingredients to make Muthabal or Baba Ganoush

  • 1 Big eggplant
  • 2 tbsp Tahini (sesame paste)
  • 2 cloves garlic
  • 1 tsp lime juice
  • salt as per taste

How to make Muthabal or Baba Ganoush

  1. Bake the egg plant in the oven till it is soft. Allow to cool and peel the skin. In a bowl add the eggplant, crushed garlic, tahini, lime juice and salt. Mash with a mortar or in a blender.
  2. I just give one pulse in my blender. Garnish with olive oil, pomegranate seeds and paprika powder. Serve along with kubus and grilled chicken.
