Ingredients Serving: 5

  1. For the basil cilantro pesto:
  2. 1/2 fresh basil leaves
  3. 1/2 cup coriander leaves/cilantro
  4. 5-6 cloves garlic
  5. 8-10 roasted almond
  6. 3-4 tbsp olive oil
  7. 2 tbsp lemon juice
  8. Salt to taste
  9. For the toppings:
  10. 1-2 tomatoes finel chopped
  11. 1 cup all color bell peppers finely chopped (red,yellow and green)
  12. 1 tbsp Butter
  13. 1 tbsp olive oil
  14. 1/2 tsp sugar
  15. 1 tsp Oregano
  16. 1 tsp red chilli flakes
  17. 1 tbsp pizza sauce
  18. Salt to taste
  19. 1 big bread loaf sliced diagonally
  20. 1/2 cup grated processed cheese

Instructions

  1. Grind the ingredients for pesto in a smooth paste. Add little water if needed.
  2. For the topping, heat butter and olive oil in a sauce pan, saute the tomatoes till soft. Then add the bell peppers and saute for 2 mins. Add the pizza sauce, salt, oregano, red chilli flakes and sugar. Mix well and keep aside
  3. Grease the bread with butter and roast on tava or pizza pan. Once the bread is roasted spread a generous amount of pesto and the topping. Sprinkle some grated cheese and serve immediately.
