Sindhi Dal Pakwan

Ingredients to make Sindhi Dal Pakwan

  • For making Pakwan/crisp pooris :
  • 125 grams refined flour or maida
  • 125 gms wheat flour
  • 1 tsp carrom seeds
  • 1 tsp cumin
  • 2 tblsps oil
  • salt to taste
  • For making dal :
  • 250 grams chana dal / Bengal gram
  • ¼ tsp turmeric powder
  • ½ tsp cumin seeds
  • A pin h of hing/asafoetida
  • ½ tsp each of pepper powder and chilli powder
  • 2 green chillies,chopped finely
  • ginger piece(small) grated
  • 1 tblsp chopped coriander leaves
  • salt to taste
  • 4 tblsps tamrind juice or to taste
  • 4 green chillies to deep fry to serve with
  • Green dhania pudina chutney to serve with
  • Some chopped onion to serve with

How to make Sindhi Dal Pakwan

  1. For making Pakwan : Mix all the above mentioned ingredients listed under Pakwan section together
  2. add enough water to form a hard dough
  3. set aside 15 minutes,
  4. take lime-sized ball of dough and roll out into a thin round roti,
  5. prick the roti all round with a fork and deep fry over a slow fire till crisp and golden colour-
  6. Pakwans are ready
  7. To make it's accompaniment Dal
  8. Soak Chana dal for an hour
  9. Wash it nicely under running water
  10. Put dal to cook in enough water to which salt, green chillies and turmeric powder has been added
  11. cook till the dal is soft but not mushy around 3 whistles
  12. Let the pressure get released and open and check if cooked or not
  13. If not cooked properly keep it on slow flame for a while
  14. Now for tempering : Heat 3 tblsps oil add cumin seeds,when they stop crackling, add a pinch of Asafoetida /hing and red chilli powder
  15. Pour this in cooked dal
  16. In the same pan by adding little oil heat it and fry green chillies
  17. Serve dal by adding tamrind pulp, chopped onions, red chilli powder and fried green chillies
  18. Sprinkle chopped green coriander leaves
  19. Serve hot dal with crispy poories/Pakwan.
  20. You can serve it in shot glasses for individual portion and fuss free eating

My Tip:

If you want to control the portion just serve in shot glasses
