ABOUT Luchi Torkari RECIPE

Luchi torkari is a traditional bengali breakfast. Luchi/puri are made with refined flour but to make it bit healthy i always make the dough with half portion refined flour and half portion whole wheat flour. Served hot with potato and pumpkin dry sabzi.

Ingredients Serving: 2

  1. To make Luchi dough we need
  2. whole wheat flour 1/2 cup
  3. Refined flour 1/2 cup
  4. Salt a pinch
  5. Refined Oil 1cup
  6. To make the sabzi we need
  7. Potato 2 diced
  8. Pumpkin 150 gms diced
  9. Oil 1 tsp
  10. Onion seed 1/2 tsp
  11. Turmeric powder 1/4 tsp
  12. Cumin powder 1/4 tsp
  13. Salt 1tsp
  14. 1/4 cup water

Instructions

  1. To make the dough, mix whole wheat flour, refined flour, water and salt. Rest it for 5 mins.
  2. Wash, peel and dice the potatoes and pumpkin in equal sizes.
  3. Heat a pressure cooker with oil and temper with panch foron.
  4. Add the vegetables, turmeric powder, cumin powder,salt and saute for two minutes in medium flame
  5. Now add the water and close the lid of the cooker and wait for a whistle.
  6. Now for the luchi, heat a kadai with oil
  7. Make equal lemon size portions of the dough
  8. Roll them one by one, and deep fry in hot oil by turning sides occasionally
  9. Enjoy luchi torkari .
