Ingredients Serving: 6

  1. 250 gms fussili pasta
  2. 1 medium bowl diced broccolli
  3. 1 medium bowl diced peppers (coloured peppers preffered)
  4. 1/2 bowl diced baby corn
  5. 1 bowl diced carrots
  6. 2 medium onions sliced
  7. 8-10 Garlic cloves
  8. 12-15 soaked cashews
  9. 1 inch cinnamon stick
  10. 1 black cardamom
  11. 5-6 cloves
  12. 1 tbsp minced garlic
  13. 5-6 tbsp oil
  14. Salt to taste
  15. 1 tsp Oregano
  16. 1 tsp Mixed Herbs
  17. 1 tsp chilli flakes
  18. 2 tbsp fenugreek leaves
  19. 100 gms grated cheddar cheese + some for garnishing
  20. 200 ML MILK
  21. 2-3 tbsp fresh Cream
  22. 1/2 tsp garam masala
  23. 1/4 tsp black pepper powder

Instructions

  1. boil some water in a big sauce pan...add 1 tbsp oil and some salt...after the water boils add the pasta and cook for 10 mins..it should become soft...
  2. add some cold water to resist from overcooking...strain the pasta pass through some cold water it will not stick to each other...
  3. in another sauce pan boil some water blanch the sliced onion for 2-3 mins...train it. let it cool down. grind it along with soak cashews to form a smooth paste.
  4. in a fry pan add oil. when its hot add the minced garlic... add the cinnamon stick, black cardamom and cloves cook for around 30 secs.
  5. add the diced vegetables one by one cook it on a high flame for around 2 mins. vegetables should not loose its crunchyness..add the paste of onion and cashews...cook for 2 mins. keep stirring continously..
  6. add the milk let it come to boil..add the fresh cream.. mix it well... add the grated cheese mix it till it melts... add the fenugreek leaves, oregano, chilli flakes, mixed herbs, black pepper powder, garam masala and salt to taste...
  7. add the boiled pasta and mix it well. methi malai cheesy pasta is ready..
  8. while serving further garnish with grated cheese, sprinkle some fenugreek leaves, oregano, mixed herbs, and chilli flakes..serve it hot...
