ABOUT Aalupuri RECIPE

Aalupuri,,,,this dish sounds familiar to all of you..but wait a sec. Friends... This is not typical aalupuri that comes to your mind...poori stuffed with potato filling... No..no..no.. This is very very unique and if you are non-gujarati.. Then you surely don't know about this party dish.. Heavenly taste and toooo much yummy.. From a small kid to adults...i bet each & everybody surely gonna like this.. Must try recipe..

Ingredients Serving: 4

  1. Potato- 3 (boiled)
  2. Split peas- 250 gm (soaked in water for whole night)
  3. Salt- to taste
  4. Cumin seeds- 1/4 tsp
  5. Oil- 3 to 4 tbsp
  6. Red chilly powder- 1/2 tsp
  7. GARAM MASALA- 1/4 TSP
  8. Turmeric powder- 1/4 tsp
  9. Coriander powder- 1/2 tsp
  10. Water- 3 cups or as per need (for ragada)
  11. Green chilly- 4 to 5
  12. Kokum- 6 to 7
  13. Water- to make chutney
  14. For Puri:
  15. Maida/all purpose flour- 3 cup
  16. Wheat flour- 1 cup
  17. Salt- 1/4 tsp
  18. Water- to knead a dough
  19. oil- for frying
  20. For Garnishing:
  21. Sev
  22. Onions- sliced
  23. Cheese cubes
  24. Chat masala

Instructions

  1. Wash split peas properly and boil it in a pressure cooker for at least 15 minutes or till it's done completely.
  2. Take boiled potatoes & cut it into small pieces.
  3. Heat oil in a pan, add cumin seeds. When it crackles, add red chilly powder, garam masala, coriander powder, turmeric powder & little bit salt. Sauté it for few seconds.
  4. Add water and bring it to a boil.
  5. Add potatoes & peas. Mix it well. Mash it slightly. Add salt if needed.
  6. Cook for 5 to 7 minutes & switch off the flame. (We have made ragada)
  7. Chutney: Grind green chillies adding some water & salt. Grind kokum adding some water & salt.
  8. Puri: in a bowl add wheat flour & all purpose flour. Add salt & mix well. Knead a soft dough adding water.
  9. Take some portion from dough. Dust the surface & flatten the dough ball.
  10. Now take any round shape bottle cap or cutter. Put it on flatten dough & press it & cut into small round shape.
  11. Take a fork & using its backside, make marks on small puri very slightly. (So it won't become like pakodas)
  12. Heat oil in a karahi. Make sure oil should be very hot.
  13. Place these puri & take out just after 15 to 20 seconds.
  14. Take a plate, place 8 puris. Put some ragada and all chutneys. Garnish with onions, sev and chat masala.
