ABOUT Uggrani RECIPE

Uggrani is a dish prepared with puffed rice. This is one of the staple breakfast items of Northern Karnataka, Telangana, Marathwada region and is known as uggrani/uggani, borugula/bongula upma, susheela resp. This is best accompanied with mirchi pakoda or mirchi bajji as it is locally called.

Ingredients Serving: 4

  1. 500 gms of puffed rice
  2. A pinch of turmeric powder
  3. Salt to taste
  4. 2-3 teaspoons of mill roasted chana dal powder
  5. Coriander leaves to garnish
  6. Oil for tempering
  7. 1 spoon each of mustard seeds cumin seeds and urad dal
  8. 2 teaspoons of peanuts
  9. A sprig of curry leaves
  10. Water for soaking

Instructions

  1. Clean the puffed rice. Soak it in a big bowl of water for 30-40 seconds. (Ensure each grain is soaked well.)
  2. Drain the water. Take a little of it and squeeze using your palms. Repeat this process for the rest of the quantity. (We want puffed rice to be damp but not wet.)
  3. Heat oil in a big pan. Add mustard seeds and let it splutter. Then add cumin seeds and fry for 5 seconds.
  4. Next add peanuts, fry till it turns a little brown in colour. Add urad dal. and fry it till it turns brown. Then add dried red chillies, curry leaves and fry for another 10 seconds.
  5. Now add the soaked and squeezed puffed rice. Also add in salt to taste and mix it well. Add mill roasted chana dal powder and stir well.
  6. Turn off the flame, add the coriander leaves to garnish.
  7. Sprinkle lemon juice on top and serve it hot.
