ABOUT Sunrise Cupcakes RECIPE

A delicious way to start your day! With veggies, theses fantastic breakfast cupcakes will get you started on the day. A good food item for parties and get togethers too. Low calorie, fiber packed, these cupcakes are my family favorite.

Ingredients Serving: 3

  1. Rava/Sooji 1 cup
  2. Yogurt 1/2 cup
  3. Onion (chopped) 1/2 cup
  4. Tomato ( chopped) 1/2 cup
  5. Capsicum ( chopped) 1/2 cup
  6. Carrot ( chopped) 1/4 cup
  7. Green chilli ( chopped) 1/2 tablespoon
  8. Turmeric powder 1/2 teaspoon
  9. Baking soda 1/4 teaspoon
  10. Lemon juice 1/2 teaspoon
  11. Salt (to taste)
  12. Water 2 cups

Instructions

  1. Take sooji in a bowl. Add yogurt and mix well.
  2. Add water and salt to make mixture of not so thick not so thin consistency.
  3. Add all the chopped veggies in it.
  4. Add turmeric powder in mixture and mix well.
  5. Let the mixture rest for 30 minutes.
  6. After 30 minutes, if the mixture is too thick add more water and mix well.
  7. Add baking soda and lemon juice and mix in one direction.
  8. Quickly pour in cupcake moulds and microwave for 4 minutes.
  9. Enjoy these beautiful red yellow sunrise like cupcakes in your breakfast with tea.
