Blueberry Cheesecake

Ingredients to make Blueberry Cheesecake

  • For the Base:
  • 1 big packet of Digestive biscuits
  • 1 tbsp Brown sugar
  • 1/2 cup Melted butter
  • For the cream:
  • 1 sachet Dreamwhip powder
  • 1 tin Puck cream (plain)
  • 1 packet cream Cheese (I used Philadelphia cream cheese)
  • 1/2 tsp vanilla essence
  • 1/2 to 3/4 cup sugar
  • 1/2 cup Cold Milk
  • 20 gms Gelatine
  • 1/4 cup water
  • For the Topping:
  • 1 tin Blueberry Topping

How to make Blueberry Cheesecake

  1. For the Base: Powder the biscuits and brown sugar in the grinder. Then pour the melted butter with the biscuits and mix it well.
  2. Now spread this evenly in some glasses or in a spring form pan lined with foil or parchment paper. Keep this refrigerated till we prepare the cream.
  3. For the Cream: Soak the gelatine with 1/4 cup water. Beat the dream whip powder with cold milk and vanilla essence till peaks form.
  4. Now add the puck cream and beat well. Then add in the cream cheese and sugar and beat till the sugar dissolves. Double boil the gelatine and pour the melted gelatine into the cream cheese mixture.
  5. Now pour this over the biscuit base and refrigerate till it is almost set. After it is almost set, pour the blueberry topping on top of the cream.
  6. Again refrigerate till everything is set and cooled for a couple of hours.
  7. Enjoy the blueberry cheesecake!

My Tip:

With the listed ingredients measurements, I got 5 individual cups and a 9 inch size cheesecake also.
