My Love for Chinese food motivated me to do this experiment which was very successful !!!

Ingredients Serving: 4

  1. 1 big Baingan/ Brinjal/Eggplant
  2. 1/2 cup chopped spring onions
  3. 1/4 cup tomato purée
  4. 1 tsp Worcester sauce
  5. 1 tbsp Red chili sauce
  6. 1 tbsp tomato sauce
  7. 1 tsp sugar
  8. 1/4 tsp Ajinomoto
  9. Oil for shallow fry + 1tbsp for saute
  10. Salt as per the taste

Instructions

  1. Wash the brinjal and dice them
  2. Take a wok and heat oil for shallow fry
  3. Add the diced Baingan and shallow fry them
  4. Now add spring onions and sauté
  5. Add tomato purée and salt and cook for 5 minutes on high flame
  6. Set aside this Baingan mixture
  7. Now Take another pan heat 2 tbsp oil
  8. Add the chopped ginger and sauté on high flame so that it got a little burnt
  9. Now add Worcester sauce, red chili sauce, tomato sauce and sugar
  10. Sauté it a little
  11. Now add those Baingan mixture into it
  12. Cook for a while till the extra water goes off on high flame for a while
  13. Sprinkle some spring onions on top of it
  14. Your "InChin Eggplants" are ready to serve. Serve them hot.
