Ingredients Serving: 4

  1. For the Dal : Split bengal gram(Chana dal) 1 cup
  2. Salt to taste
  3. Red chilli powder 1/2 teaspoon
  4. Turmeric 1/4 teaspoon
  5. Black pepper powder 1/4 teaspoon
  6. Dry mango powder/Amchoor powder 2 pinches
  7. Cumin seeds 1/2 teaspoon
  8. Water as needed
  9. Oil 1 teaspoon
  10. For the Pakwan/ Samosa
  11. All purpose flour(Maida) 1/2 cup
  12. Whole wheat flour 1/2 cup
  13. Oil or ghee 1 tablespoon
  14. Carom seeds a pinch
  15. Roasted cumin 1/4 teaspoon
  16. Salt to taste
  17. Cold water for kneading as needed
  18. Oil for deep frying as needed
  19. Finely chopped onion 1 tablespoon
  20. To serve- Mint tamarind chutney

Instructions

  1. Wash and soak the dal for 2 hours or overnight.
  2. In a pressure cooker add little water.
  3. Add the dal,salt,red chilli powder, turmeric.
  4. Keep the water level just 1 cm above the dal.
  5. Water is added less as dal has to be quite thick and moisture has to be less.
  6. Pressure cook on full flame for 3 whistles.
  7. Let the pressure release on its own.
  8. Heat 1 teaspoon oil for tempering the dal.
  9. Add cumin seeds.
  10. Let it splutter.
  11. Pour over the dal.
  12. Also, sprinkle black pepper powder and amchoor.
  13. Mix it all gently.
  14. Spread the dal in a plate so that it cools down and becomes thick.
  15. For the Samosa/ Pakwan cover- Take the flours, salt ,cumin seeds and carom seeds in a bowl.
  16. Add the ghee.
  17. Lightly work it into the flour mixture.
  18. By adding water little by little, knead a tight dough.
  19. Cover and let it rest for 15 minutes.
  20. Make equal size small balls.
  21. Roll out like rotis.
  22. With a sharp knife, cut into two parts.
  23. Take one part and make a cone.
  24. Place a little dal and very finely chopped onion in the center.
  25. Fold it like samosas and seal the edges by applying little water and pressing .
  26. Prepare all samosas similarly.
  27. Deep fry the samosas in hot oil,but on low flame, so that they are cooked well and get crunchy too.
  28. Fry till golden brown.
  29. Drain on a sieve to remove excess oil.
  30. Serve hot with tamarind chutney
