ABOUT Oats, Broken wheat and Vegetables Muthiya RECIPE

A very famous Gujarati Snack which needs no introduction. A healthy twist to regional recipe for best breakfast option. I have majorly used oats & dalia/broken wheat, with not only bottle gourd but lots of vegetables.

Ingredients Serving: 4

  1. 1 and 1/2 cups oats crushed
  2. 1/2 cup daliya/Broken Wheat cooked
  3. 1/4th cup grated bottle gourd
  4. 1/4th cup grated carrots
  5. 1/4 cup grated cabbage
  6. 2 spoons semolina dry roasted
  7. 1 tbsp besan/gram flour
  8. 1/2 cup fenugreek leaves chopped
  9. 1/2 tsp Cumin powder
  10. 1 tsp Ginger & green chilli paste
  11. Salt to taste
  12. 2 Tbsp Coriander leaves
  13. Turmeric 1 tsp
  14. salt to taste
  15. Asafoetida a pinch
  16. 1tsp Red chilli powder
  17. 1 tsp Coriander powder
  18. Soda bi carb 1/2 tsp
  19. Lemon Juice 1 Spoon
  20. 2 spoon yogurt
  21. 1 spoon oil
  22. Tempering--1 tsp Mustard seeds
  23. 5-6 Curry Leaves
  24. 1 tsp Sesame seeds
  25. 2 Green Chillies (long length wise slit)
  26. 1 tbsp lemon juice
  27. pinch of asafoetida/hing
  28. Coriander leaves to garnish
  29. 2 tsp oil

Instructions

  1. In a bowl mix everything together for muthia except salt, soda & lemon.
  2. Keep steamer ready to steam muthia rolls.
  3. Just before putting rolls in steamer put soda, lemon, and salt
  4. Mix everything nicely.
  5. Make cylindrical rolls.
  6. Grease the plate on which muthia rolls are to be kept.
  7. Steam for 15 to 20 mins on medium flame.
  8. In between change the sides of muthia rolls to steam on both sides properly.
  9. Take out and after it cools cut into pieces.
  10. For tempering: In a kadai take 2 spoons oil, mustard seeds, sesame seeds, curry leaves, green chillies, asafoetida.
  11. Add muthiya, Saute nicely.
  12. Squeeze lemon over it while serving.
  13. Garnish with coriander and enjoy with hot cup of tea/Coffee .
