Cheese ,mayonnaise ,cucumber and tomatoes give a unique flavour to the salad in these parcels, a combination which goes well with the basmati rice .

Ingredients Serving: 2

  1. 1 cup Basmati Rice
  2. 8 nos cabbage leaves ( cut into the half and remove the leafs)
  3. Blanch the leaves with little salt and saute with butter .
  4. 1 piece of Cucumber finely diced
  5. 230 grams feta cheese cubed
  6. 6 nos Cherry tomatoes
  7. 1/2 cup apple Finley diced
  8. 1/2 cup chopped kiwi
  9. 1/2 cup grated carrot
  10. 2 teaspoon chopped garlic
  11. 1 teaspoon chopped green chilies
  12. Pink salt to taste
  13. 1/2 teaspoon black pepper powder
  14. 2 tablespoon mint leaves
  15. 1 teaspoon butter
  16. 2 pieces olive chopped
  17. 2 tablespoon Jalapeno chopped
  18. 2 tablespoon Yellow capsicum chopped
  19. 2 tablespoon mayonnaise
  20. 2 teaspoon lemon juice

Instructions

  1. Cook the rice and drain , tip into a bowl and leave to cool completely .
  2. Line a glass bowl with aluminum foil , then line two slice of fried cabbage leaf , allowing the ends to overlap the edges of the dishes .
  3. Add all the ingredients like cucumber , cubes of feta , tomato quarters ,one by one all the ingredients andmix together well .
  4. Season with salt and pepper to taste.
  5. Spoon the rice salad mixture into the cabbage lined bowl .
  6. Then carefully fold over the overlapping ends of the cabbage so that the rice mixture is completely encased.
  7. Chill the parcels in the refrigerator for 30 minutes.
  8. Then un mould the parcel on to a plate , carefully peel off the aluminum foil , then garnish with slices of lemon and mint leaves .
