Pomegranate Chicken

Ingredients to make Pomegranate Chicken

  • 750 gms Chicken
  • 1 cup fresh sweet Pomegranate juice
  • 1 tsp black Pepper powder
  • 2 medium sized Onions finely sliced
  • 2 tbsp Sunflower oil
  • 2 tbsp desi Ghee (Clarified Butter)
  • 1 pinch of Sugar
  • 1 tsp Shajeera
  • 2 tbsps Ginger Garlic paste
  • 1 tsp dry roasted Cumin powder
  • 1 tsp red Chili powder (or as much as you like)
  • 2 medium sized Potatoes cut in quarters and fried
  • Salt to taste
  • A handful of Pomegranate pearls for the garnish

How to make Pomegranate Chicken

  1. For the marinade, mix the chicken with the fresh sweet pomegranate juice, pepper powder and salt to taste. Keep aside for 1 hour.
  2. Heat the oil and ghee along with the shajeera until they begin to pop.
  3. Now lightly fry the quartered potatoes until they turn slightly golden brown. Remove from heat and keep aside.
  4. Now add the sliced onions and a pinch of sugar to this oil.
  5. Slow fry the onions until they are brown and crisp.
  6. Now add the chicken, marinade juice, fried potatoes and ginger garlic paste.
  7. Fry until the chicken is cooked and the chicken is soft and falling apart and the oil leaves the sides. Bengali's call this "koshano".
  8. Just before taking off the stove, add a generous tsp of dry roasted cumin and chilli powder.
  9. Serve with a garnish of garnet like pomegranate arials.
My Tip: Keep adding a little water to the chicken as you fry it until the gravy takes on a burnished red color from caramelizing the onions and pomegranate juice.
