ABOUT Mix Veg Croquettes RECIPE

Very similar to famous Gujarati Muthiyas, in that instead of frying, I have steamed the Croquettes.

Ingredients Serving: 4

  1. Grated carrot 1/2 cup
  2. Grated cabbage 1/2 cup
  3. Boiled potato 1
  4. Boiled peas 1 tablespoon
  5. Blanched palak leaves 5
  6. Grated paneer 1 tablespoon
  7. Besan 1/4 cup
  8. Rawa 1/4 cup
  9. Whole wheat flour 1/4 cup
  10. Roasted oats powder 1 tablespoon
  11. Green Chillies 2
  12. Hing a pinch
  13. Sugar 1 teaspoon
  14. Ginger 1/2 inch
  15. Lemon juice 1 teaspoon
  16. Baking soda 2 pinches
  17. Salt to taste
  18. Green coriander leaves 1 tablespoon
  19. bread crumbs and Rawa mixed together 1/4 cup
  20. Oil as needed
  21. Water as needed

Instructions

  1. Chop the palak leaves very finely after squeezing out the water.
  2. Squeeze out as much water as possible from the Cabbage and the carrots.
  3. In a bowl take the grated carrot, cabbage ,green coriander leaves, peas, paneer, palak leaves and mashed potato.
  4. Add in besan, rawa, whole wheat flour, oats powder, salt, red chilli powder, green chilli , hing, grated ginger, lemon juice, sugar, 1 teaspoon oil.
  5. Mix it all well.
  6. Make small equal size balls.
  7. Heat water in a steamer and arrange all the ready balls.
  8. Steam them for about 12 to 15 minutes.
  9. Check with a toothpick to see if they are done.
  10. Remove and roll in the bread, rawa mixture.
  11. Meanwhile heat 2 tablespoons oil in a non stick pan.
  12. Saute the balls gently, so that they become crunchy on all sides.
  13. Serve hot with coconut chilly chutney , ketchup or any dip.
