ABOUT Homemade Chicken Shawarma.. RECIPE

It's a popular gourmet sandwich that can probably be never made at home perfectly, but wait, there's a very easy way out. I did mine using a panini grill at home. Marinated chicken chunks are mounted on a large rotating skewer and then roasted slowly to perfection against a gas burning grill. Due to unavailability of such industrial roasters at homes, this has typically remained a restaurant dish. I am sure you all will love it. The basic concept in this recipe is to have a nice marination that mimics a good chicken shawarma flavour and then grill it in such a way that keeps it juicy. Happy Cooking!!!!!!!

Ingredients Serving: 4

  1. Chicken breast skinless 800 gm
  2. Tomato Sauce 2 tbsp
  3. Lemon juice 4 tbsp
  4. Hung curd or Greek yoghurt 4-5 tbsp
  5. Salt 2 tbsp
  6. olive oil 4 tbsp
  7. Garlic finely minced 2 tbsp
  8. Ginger finely minced 1 tbsp
  9. Thyme 2 tbsp
  10. Paprika powder 2 tbsp
  11. Nutmeg powder 2 pinches (optional)
  12. FOR ASSEMBLING... we need.
  13. Grilled tomatoes 2 to 3
  14. Pita bread 7 to 8
  15. Garlic sauce 1/2 cup
  16. Pickled cucumbers 1 cup
  17. Mayonnaise 1/4th cup (Optional)
  18. French fries 2 cups
  19. Lettuce leaves thinly cut 1 cup
  20. FOR THE PITA BREAD:::::
  21. Whole wheat flour 2 cups
  22. Yeast 1 tbsp
  23. Sugar 1 tsp
  24. Olive oil 1 tbsp
  25. Warm water 1 cup
  26. FOR THE PICKLED CUCUMBERS... we need
  27. Cucumbers thinly cut 4 to 5
  28. White Vinegar 1/2 cup
  29. FOR THE GARLIC SAUCE...we need
  30. Garlic bulb 1
  31. Lemon juice 1/2 cup
  32. Olive oil 1 cup
  33. Salt 1 tsp

Instructions

  1. Rinse the skinless chicken breasts with cold water.
  2. Cut horizontally into thinner cuts of about 1/2 inch.
  3. Each breast could possibly be split into 2 slices depending upon thickness.
  4. Marinate the chicken breasts with all the ingredients.
  5. Cover and refrigerate overnight.
  6. Now grill the chicken using a panini grill for 15 minutes on medium heat.
  7. Also simultaneously grill the tomatoes too.
  8. Once cooked, shred the chicken thinly.
  9. Now it's all ready to be wrapped into a shawarma.
  10. For the pita bread, mix yeast and sugar in warm water.
  11. Allow it to prove and then mix it with all the other ingredients to form a smooth dough.
  12. Knead the dough for 5 minutes until smooth.
  13. Divide the dough into 8 portions.
  14. Roll out medium sized thick round discs.
  15. Bake them on 180° for 15 to 18 minutes.
  16. For the garlic sauce, just blend all until you get a thick mayonnaise type of consistency.
  17. For the pickled cucumbers, just cut the cucumber juliennes and immerse in vinegar overnight. Other veggies like carrots, turnips and radish can also be used.
  18. Spread the chicken shreds all along the diameter of a pita bread.
  19. Spread some garlic sauce.
  20. Followed by pickled cucumbers.
  21. Grilled chopped tomatoes and some french fries.
  22. Enjoy!!!!!
