ABOUT Sujjappa/Deep fried Rava dessert RECIPE

These deep fried Bombay Rava dessert is a traditional receipe from Andhra pradesh. I have learnt it from my mother and now passing it on. They are soft within and crisp on the outside. Loves by kids and elders. Can make as a perfect snack for a party or make it on any festive occasion.

Ingredients Serving: 5

  1. Bombay Rava - 1 cup
  2. Sugar - 3/4 to 1 cup
  3. Water - 2 cup
  4. Ghee - 3 to 4 tbsps
  5. Cardamom powder - 1 tsp
  6. Oil for Deep frying
  7. Broken Cashewnuts - 1/2 cup

Instructions

  1. Add Rava and 2 tbsp ghee to a pan
  2. Saute well
  3. No need of browning
  4. Add cardamom powder and mix well
  5. Now switch of the gas and add the sugar
  6. Add the broken cashews
  7. Keep 2 glasses water to boil
  8. Now add the rava mixture to the boiling water stirring continuously
  9. Now mix till thickens a bit but still soft
  10. Switch of the gas and cover and keep aside
  11. Keep oil ready for deep frying
  12. Take the batter on a plate, apply ghee to both hands and make lemon sized round balls and flatten a little to make Atleast 1/4 inch thick
  13. Now add the flattened balls in hot oil. 2 to 3 at a time
  14. Leave to brown turning once in between
  15. Remove when it appears to be golden in colour
  16. Place all on a tissue. Ready to serve
