ABOUT Bhindi ka Jhol RECIPE

I like lady fingers, but crispy, my sister in law cooked it and it is really tasty and different.

Ingredients Serving: 4

  1. 200 gms Bhindi (lady fingers) washed and dried
  2. Oil to fry + (2 tsp oil or ghee to garnish)
  3. 2 green chillies + 1 red chilli (to garnish)
  4. 1 tsp cumin seeds
  5. ĵ tsp asafoetida
  6. 1 tsp chilli powder
  7. 1 tsp coriander powder
  8. 1/2 tsp turmeric powder
  9. 1 cup beaten curd
  10. 1 tbsp gram flour
  11. salt to taste
  12. 1/2 tsp garam masala powder
  13. A handful of coriander leaves

Instructions

  1. Trim the bhindi's and slice them thinly. Deep fry the bhindis and remove from oil.
  2. For the jhol - Heat oil, add asafoetida and cumin seeds. When the seeds crackle, add all the dried masala except the garam masala powder. Beat curd with gram flour.
  3. Add beaten curd on low heat and stirring constantly till the masala leaves the oil. Add four cups of water and salt. Simmer for 10 minutes.
  4. Gently add the fried bhindis and keep cooking on low heat for 5 minutes.
  5. Sprinkle garam masala powder on top and garnish with 1 red chilli and coriander leaves.
  6. Have it hot with a dash of desi ghee.
