ABOUT Lemon rice RECIPE

This is a tangy and tasty lunch preparation of South India.

Ingredients Serving: 3

  1. Rice - 2 cups
  2. Lemon- 3
  3. Oil- 3 Tbsp
  4. Turmeric powder- 1 tsp
  5. Salt to taste
  6. Mustard seeds- 1 tsp
  7. Urad dhal- 1 tsp
  8. Peanuts- 2 tsp
  9. Fried Gram- 1 tsp
  10. Hing- 1/2 tsp
  11. Green Chillies- 1
  12. Curry leaves- 10
  13. Coriander leaves - 2 tsp

Instructions

  1. Pressure cook the raw rice with water in a 1:2 Ratio. Then let the rice cool down.
  2. In a kadai, take some oil, add mustard seeds, urad dhal, peanuts, fried gram, one by one. Let these ingredients fry, then put in the hing. Next put in green chillies and saute it well.
  3. Add the boiled and cooled rice, salt, turmeric and lemon juice. Keep stirring on a medium flame for 3-4 minutes.
  4. Garnish it with coriander and curry leaves just before serving this tangy and yummy dish.
