ABOUT Anda Alu jhola(Odia style Egg curry) RECIPE

This is authentic style odia egg curry. In odia for egg curry we say it as "anda jhola". "Jhola" is reffeted to as "thin gravy". As odia people like to eat rice, so we make thin consistency gravy which can be easily consumed with rice.If you are looking for simple egg curry, this the perfect solution for you meal plan.

Ingredients Serving: 2

  1. Eggs-4
  2. Baby potato-6
  3. Onion paste- 2 tablespoon
  4. Ginger paste-1 tablespoon
  5. Garlic paste- 1 tablespoon
  6. Tomato puree- 1/4th cup
  7. Sugar-1/2 teaspoon
  8. Bay leaf - 1
  9. Mustard seeds-1/4 teaspoon
  10. Turmeric-1/4teaspoon
  11. Mustard Oil/ any vegtble oil-2tablespoon
  12. Coriander powder-2 teaspoon
  13. Cumin powder-1 teaspoon
  14. Garam masala powder- 1 1/2 teaspoon
  15. Chilli powder- 1 tablespoon
  16. salt as per taste
  17. Coriander leaves for garnishing

Instructions

  1. Firstly , boil the eggs and potatoes and then peel the skin if egg and potatoes and keep aside.
  2. Secondly, heat up a khadai and then add 2 tblspn of oil in it, once the oil gets heated up add the eggs and fry it from all sides. Once the eggs are done now remove them from oil and add the potatoes and just toss it for few seconds and take them out.
  3. Now, add 1 more tblspn of oil in khadai, then add the sugar, after sometime u'll see sugar starts to caramelize with reddish color. Now put the bay leaf and mustard seeds.
  4. Once the mustard seeds starts spluttering,add onion paste, ginger garlic paste, turmeric, chilli powder, coriander powder, cumin powder and garam masala. Cover it with a lid and keep it in low flame.
  5. After 5 minutes remove the lid, u'll see oil coming out from the sides of masala, then add tomato puree and salt. Again cover it with lid for 7-8mins.
  6. Now remove the lid , add 2 glass of hot water.
  7. Now add eggs and potatoes to it, and keep in medium flame and let it to boil for 8-9mins.
  8. Now turn off the flame and add 1/2 tspn garam masala powder and coriander leaves.
  9. Serve hot with rice/roti.
