ABOUT Dal Bafle, MP Style RECIPE

Daal baafle is my mother in law's specialty, this is a very usual indulgence in our house this is one of my husband's favorite dish also, so I learnt this recipe from my mother in law. I hope you all enjoy this too.

Ingredients Serving: 2

  1. 1/2 cup toor daal
  2. 1/4 cup moong daal
  3. 1/4 cup chana daal
  4. 1/4 cup urad daal
  5. 1/4 cup yellow masoor daal
  6. 2 Cup wheat flour
  7. 1/3 cup sooji
  8. 1/3 cup besan
  9. 1/3 cup desi ghee

Instructions

  1. Wash and soak all the dals together for 20 minutes.
  2. Pressure cook the soaked dal with water, salt and turmeric for 3 whistles.
  3. Now heat ghee, add hing, jeera, green chilies, minced ginger, 2 laung/clove and 2 cardamom.
  4. After a minute, add finely chopped onions sauté till golden brown, add chopped tomatoes and cook till oil separates. Add dal and mix well, don’t mash the dal.
  5. Now prepare a tempering by heating ghee and adding hing, jeera, whole lal mirch and kashmiri red chili powder. Pour over dal just before serving. Garnish with freshly chopped coriander leaves.
  6. Method for making the bafle: Mix all the mentioned ingredients and make a dough, it should be little stiff like poori.
  7. Shape into round medium size balls, give a little shape and press finger in the middle of the each to make a small depression in the middle.
  8. Boil enough water in a big kadhai and put bafle into it. Simmer till they float on the top, remove from water, place them in a baking tray and bake them into 400°C till golden brown turning half way through.
  9. Increase the temperature to maximum to get a deep nice brown color.
  10. To crack, immediately dip into the hot ghee, after coating with ghee, take them out and serve hot with dal and green chutney.
