ABOUT Tar Halva RECIPE

This sweet is a Persian delicacy and is made from rice flour, cardamom, and ghee. Saffron is added for a lovely yellow color. Tar Halva translates to moist halva. While surfing the net, I came across this halva and immediately thought of making it as it looked very simple. It is very similar to our regular whole wheat flour halva; just the technique being changed a bit.

Ingredients Serving: 4

  1. Sugar: 2/3 cup (125 gms)
  2. water: 1/2 cup
  3. Saffron: 3-4 strands (powdered)
  4. Rose water: 2 tbsp.
  5. Rice flour (Chawal ka Atta): 1 cup (165 gms)
  6. Ghee: 6 tbsp
  7. Green Cardamom: 4 (peeled and powdered)

Instructions

  1. In a pan take sugar and water. Let a boil come and then add crushed saffron. Mix well and switch off the flame. Add rose water and mix well.
  2. In another pan dry roast rice flour until fragrant. It will take around 15-20 minutes. Make sure the flour doesn’t burn.
  3. Add ghee and cardamom to it. Mix well and cook for other 4-5 minutes.
  4. Now add the syrup in the rice flour pan. The mixture will sizzle so be careful
  5. Mix well until the mixture is well combined and it looks like a crumbled dough.
  6. Switch off the flame and keep stirring until the Tar Halva starts pulling away from the sides and bottom of the pan.
  7. Transfer the Tar Halva to a serving plate. Smoothen the top with the back of a spoon, and then use the tip of the spoon to make designs on top.
  8. Garnish with slivered pistachios and serve hot or cold.
  9. Delicious “Tar Halva” is ready!
