ABOUT Achaari Baingan RECIPE

Its a tangy n spicy party dish enjoyed best with ghee smeared piping hot phulkas.

Ingredients Serving: 5

  1. 250 gms. - Brinjals small ( slit n deep fried)
  2. 2 no.s - Onions minced
  3. 3 no.s - Tomatoes pureed
  4. 1 tsp - Kissan tomato puree
  5. 1 tbsp - whipped curd
  6. 1/2 tsp - hing
  7. 1 tsp - mix of ( mustard
  8. seeds, methi dana, jeera,
  9. Kalonji ).
  10. 1/2 tsp - Red chilli powder
  11. 1/2 tsp - Turmeric powder
  12. 1 tbsp - coriander powder
  13. 1 tsp - Jeera powder
  14. Salt to taste
  15. 1 tsp - Kasuri methi
  16. 1 tbsp - Refined oil
  17. FOR GARNISH:
  18. fresh chopped coriander

Instructions

  1. Heat oil in a Kadhai
  2. Add hing ,jeera ,saunf,mustard seeds, kalonji.
  3. Now add minced onions and saute for a minute.
  4. Add ginger-garlic paste n mix well. Saute again for 1 min
  5. Add pureed tomatoes and Kissan tomato puree.
  6. Mix well n add all dry masala.
  7. Now cover the Kadhai with lid and cook on slow flame for 8-10 minutes.
  8. Now add the whipped curd.
  9. Mix gently.
  10. Add the deep fried brinjals , and coat the masala on to the brinjals. Now cook on slow ,flame for about 5-7 minutes.
  11. Check n adjust salt n spices.
  12. Once the masala starts leaving oil on sides ,switch off the gas.
  13. Transfer to serving bowl.
  14. Garnish with chopped fresh coriander leaves.
  15. Serve hot with piping hot roti.
