Hyderabadi veg biryani

Ingredients to make Hyderabadi veg biryani

  • 1 tbsp - ginger garlic paste
  • 1 tsp - biryani masala powder
  • 1 tsp - red chili powder
  • 1 tsp - turmeric
  • 4 tbsp - ghee or oil
  • Saffron strands 30 ml hot milk to soak
  • 250 ml yogurt
  • Few cashews and raisins
  • Nutri nugget 1 cup
  • 8 medium sized cauliflower florets
  • 1 large boiled potato cubed (peeled and boil till  done)
  • 1 large carrot chopped
  • green peas - 1/2 cup
  • A few mint leaves
  • green chili 2
  • A few coriander leaves
  • Cinnamon stick 2 inch
  • green caradamom 2
  • black cardamom 1
  • Strands of mace 2
  • 1 star anise
  • 6 cloves
  • 1 bay leaf
  • ½ tsp shahi jeer
  • Basmati rice 1 1/2 cup

How to make Hyderabadi veg biryani

  1. Wash rice and boil in excess water. When 2/3 done (al dente) separate the excess water and spread it on a cloth so that there is no moisture nor any steam. Take a pan and heat some ghee.
  2. Add all the dry whole masalas. When it splutters add all the biryani ingredients. Mix well. Add all the vegetables. Assemble the biryani. I make it in the microwave which makes it very easy to cook.
  3. Take microwave dish, add half vegetables and curd. Microwave for 2-3 minutes on high. Take out the dish. Now spread rice on it.
  4. Spread onion and green leaves. Sprinkle saffron water, cover it with cling film.
  5. Microwave for 6-8 minutes. Eat with raita or green chutney and pickle.
