Ingredients Serving: 4

  1. Pasta – 4 cups (penne or fusilli or any pasta)
  2. Garlic – 1 whole (Chinese) or
  3. 2 whole (Indian) finely chopped
  4. Fresh Holland Tomatoes – 8 medium sized
  5. Salt – to taste
  6. Red chilli powder – 2 tsp
  7. Turmeric – 1/2 tsp
  8. Onion – 1 medium finely chopped
  9. Olive oil – 3 tbsp
  10. Coriander powder – 2 tsp
  11. Cumin powder 2 tbsp
  12. Garam masala powder – 1/2 tsp
  13. Oregano dried – 2 tsp
  14. Thyme – 1 tsp
  15. Green coriander – small bunch finely chopped
  16. Peppers – green yellow red sliced
  17. Red chilli flakes – 1/2 tsp
  18. Cream – 1/2 cup
  19. Water – 1/2cup

Instructions

  1. Cook pasta till al-dente and drain. Add a tbsp. of olive oil and toss. Set aside.
  2. Puree the tomatoes using a hand blender and keep aside. Finely chop garlic in a chopper or by hand, keep aside. Now in a wide pan add olive oil and then add finely chopped garlic.
  3. Sauté for half minute and then add finely chopped onion. Sauté for a minute then add pureed tomatoes.
  4. To this add turmeric, red chili powder, coriander powder, cumin powder, salt, thyme and oregano. Saute well, cover the lid and cook on low flame for around 30 minutes or slightly more if needed, so that sauce gets completely cooked and leav
  5. At this stage, you can add cream and little water for consistency along with pasta and combine well on high flame. Then add garam masala powder, fresh finely chopped coriander leaves, red chili flakes and its ready to serve.
  6. Alternatively, there is another method to enhance your pasta. After leaving sides, you can keep the red sauce aside.
  7. Now take a pan add dash of olive oil to that and add sliced bell peppers or shredded chicken or meat balls anything of your choice, sauté on high flame for a minute or two.
  8. Now add a big ladle of red sauce, sauté well, and then add a dash of water and cream (3 to 4 tbsp) along with cup of boiled pasta
  9. Stir well and then add few red chili flakes, garam masala 1/4th tsp and fresh handful of coriander leaves. Toss everything until well combined and serve warm.
