Banana and wild honey muffins with honey oats crumble

  1. Banana- honey muffin:
  2. Smashed overripe bananas - 120gm
  3. Wild honey - 100gm
  4. Butter - 100gm
  5. Eggs - 2 large
  6. Dark brown sugar - 100gm
  7. All purpose flour - 240gm
  8. Baking power - 2 teaspoons
  9. Honey- Oats crumble:
  10. All Purpose Flour - 60gm
  11. Rolled oats - 50gm
  12. Brown sugar - 50gm
  13. Butter - 30gm
  14. Honey - 2 tablespoons

Instructions

  1. Banana-honey muffins: Preheat the oven to 180 degrees celsius and line the muffin tin with liners.
  2. In a large bowl, add the butter and sugar and cream until light and fluffy. Add and beat one egg at a time.
  3. Add the wild honey and smashed bananas into the mixture.
  4. Sift the dry ingredients (flour+ baking powder) into the wet mixture. Mix until they are completely incorporated.
  5. Honey- Oats crumble: In a bowl, add all the ingredients. Crumble the butter with your finger tips and mix it all until it resembles wet sand.
  6. Assembly Pour the batter to the half of the liners, top it with a spoonful or two of the honey-oats crumble. Bake for 20-25 mins for a standard size muffin and 30-35 minutes for large bakery style muffins.
  7. Once baked, let it cool on a cooling rack! Enjoy these for breakfast with a cuppa!
