ABOUT Chicken fried rice RECIPE

A chineese cuisine most popular in India among any other dishes. It's preferred to by Indians to be cooked with left over rice as it's a quick fix and easy to make. Though the basic receipe remains the same but it's cooked in different places, states or in the street side stalls in their own way. Here I'm writing down the receipe of this chineese cuisine cooked in Andhra pradesh.

Ingredients Serving: 4

  1. Rice - 3 cups (uncooked)
  2. Water - 6 cups
  3. Chicken boneless - 1/2 kg
  4. Cornflour - 2 tbsp
  5. Red Chilli Flakes - 1 tsp
  6. Eggs - 4 +1
  7. Carrot - 1
  8. Capsicum-1
  9. Onions - 2 medium
  10. Garlic chopped - 3 tbsp
  11. Ginger chopped - 3 tbsp
  12. Green chillies - 5 (optional)
  13. Pepper powder - 2 tsp(or more)
  14. Salt to taste
  15. Sauces :
  16. Soya - 2 tsps
  17. Vinegar - 2 tsps
  18. Chilli sauce (optional)
  19. Oil as required

Instructions

  1. Wash rice and cook with 6 cups of water
  2. Wash and Chop boneless chicken to bite size peices and marinate with 1 tsp of vinegar for 15 minutes
  3. Wash the chicken peices again and marinate with 1 beaten egg, 2 tsp cornflour, 1 tsp red chilli flakes, 1 tsp soya sauce and salt for 5 mins
  4. Take a big kadhai and add 1 tbsp oil
  5. First fry the chicken peices :
  6. Add the chicken peices to the oil and cover and cook for 5 to 6 minutes
  7. Open and stir fry on high adding some pepper powder. Strain and keep aside when completely browned.
  8. Add a tbsp of oil again to the kadhai and add and beat the remaining eggs. Add salt and stir fry. Strain and remove. Keep aside
  9. Now add a tbsp of oil to the kadhai and start frying the remaining ingredients
  10. First add the chopped garlic to the hot oil and stir fry on high. Not to brown
  11. Then add the chopped ginger and chillies if using
  12. Now add the sliced onions and stir fry
  13. Add the chopped carrot, some salt and pepper stir fry and cover and cook for few minutes
  14. Now add the chopped capsicum
  15. Stir fry on high
  16. Add the cooked rice, vinegar, salt, soya sauce and some more pepper
  17. Stir fry on high till the vegetables are nicely combined with the rice
  18. Now add the fried chicken peices and mix gently
  19. Lastly add the scrambled eggs and mix gently
  20. Ready to eat
