ABOUT Mel Semifreddo with spicy citrus sauce RECIPE

Semifreddo is an Italian dessert. Its a semi-frozen ice cream. Hot citrus sauce is a perfect combination for this silky ice cream.

Ingredients Serving: 4

  1. For Semifreddo
  2. Egg - 1
  3. Egg yolk - 4
  4. Honey - 100g
  5. Cream - 300ml
  6. Vanilla extract - 1 tsp
  7. For honeycomb crumbs
  8. Sugar - 100 g
  9. Honey - 50g
  10. Soda bi carb - 1 tsp
  11. For Apple citrus sauce
  12. Small Apple slices - 5
  13. Butter - 2 tbsp
  14. Orange - 1
  15. Lemon - half
  16. Cinnamon powder - 1 tsp
  17. Chilli powder - 1 tsp
  18. Honey - 1/4 c
  19. Salt -1/2 Tsp
  20. Water
  21. Almonds - 6

Instructions

  1. Mel semifreddo
  2. Whip the cream with vanilla extract untill thickened, stop before stiff peaks. Reserve for later.
  3. Mix yolks, egg and honey. Place it on a double boiler and beat with electric blender until pale yellow and becomes a thick cream like texture.
  4. Strain it to remove any solid particles in it.
  5. Let it cool for some time. Then fold in to the whipped cream in two parts.
  6. Brush a loaf pan with oil and Cling wrap it to get the semifreddo out easily.
  7. Pour the cream in the pan and set it in freezer for 8 hrs.
  8. For honey comb crumbs
  9. In a heavy bottom pan, place sugar and honey.
  10. Give it a mix and let the sugar melt and start to brown.
  11. Now look for a golden brown colour. Remove from stove top and add soda salt. Mix well.
  12. Pour it on a lined tray. Let it cool and break it into pieces.
  13. Apple citrus sauce
  14. In heavy bottom pan, melt butter.
  15. Mix in honey, chilli, cinnamon, 3 orange rind, juice of the orange and half lemon.
  16. Bring to boil add apple slices and almonds. Let the apple cook until it is fully glazed with the sauce.
  17. Remove apples and almonds and reserve.
  18. Add 1/2 glass of water to the sauce. Let it boil and thicken.
  19. The best part is plating. Slice a semifreddo, put it in centre.
  20. Line the honeycomb crumbs.
  21. Place an orange rind on top.
  22. Pour the sauce in a piping bag and keep dots.
  23. Place the glazed apples and nuts. Enjoy the dessert.
