Coconut Rice is a very simple recipe and can be done by bachelors as well.

Ingredients Serving: 2

  1. Freshly grated Coconut -1 cup
  2. Cooked rice ( preferably Raw rice)-2 cups
  3. Mustard seeds –1 tsp
  4. Cumin seeds –1/2 tsp
  5. Urad dal – 2 tsp
  6. Bengal Gram/kadalai paruppu – 1/2 tbsp
  7. Curry leaves – few
  8. Red chillies – 2
  9. Green chillies -1 slit
  10. Asafoetida/Hing – a pinch
  11. Peanuts - a handful
  12. Gingely oil - 1 tsp
  13. salt as needed

Instructions

  1. Cook raw rice in such a way that each grains are separate. Add a tsp of gingely oil to the cooked rice and spread the rice on a plate to cool.
  2. Heat oil in a kadai/ pan, add mustard seeds, cumin seeds (optional) when it splutters, add channa dal, urad dal and red chillies.
  3. When dal changes color slightly, add green chillies, asafoetida, curry leaves and peanuts. Sauté until peanuts turn golden brown.
  4. Add grated coconut and sauté for a few minutes. Add salt needed and mix well and switch off the heat.
  5. Fluff cooked rice with a fork and add it to the prepared coconut mix. Mix the cooked rice well with the coconut.
  6. Serve with Appalam/papad or potato curry
