Cupcake Veggie Handvo

Ingredients to make Cupcake Veggie Handvo

  • Handva Mixture 200 gms
  • Grated bottle gourd 100 gms
  • Grated potato 1 Medium
  • Grated onion 2 Medium
  • Grated carrot 1 Medium
  • Sour curd 1 Cup
  • Green chilli Paste 2 tbsp.
  • garlic 20 Cloves
  • Channa dal 2 tbsp.
  • fenugreek seeds 1 tbsp.
  • Red chilli Powder 1 tsp.
  • turmeric Powder 1/2 tbsp.
  • salt to taste
  • oil 4 tbsp.
  • mustard seeds 2 tbsp.
  • sesame seeds 1 tbsp.
  • asafoetida 1/2 tsp.
  • Chopped coriander leaves 1/2 Cup
  • Eno Fruit salt 1 Packet

How to make Cupcake Veggie Handvo

  1. Soak the handva mixture in sour curd with fenugreek seeds and chana daal for 4 hours to ferment.
  2. After fermentation add all the grated vegetables to it along with green chilli paste, garlic paste, turmeric powder and salt to taste.
  3. Heat oil for tempering. Add asafoetida, mustard seeds and red chilli powder to it. Add this tempering to the mixture. Add chopped coriander.
  4. Cover the mixture for 10 minutes. Spread a little oil on the cupcake mould or any mould of your choice. Add Eno fruit salt to the mixture and mix gently.
  5. Fill the moulds 3/4 with the mixture, sprinkle sesame seeds over it and bake for 6-7 minutes. Check the handvo using a knife. If it comes out clean then the handvo is ready. Else keep for 3-4 minutes more.
  6. Once cooled remove the handvo from the mould and it is ready to be served with green chutney.
  7. We can even cook the mixture like pan cake on a non stick pan.
