Almond and Date Energy Bites

Ingredients to make Almond and Date Energy Bites

  • Medjool dates – 250 gms
  • almonds – 1 cup
  • coconut Powder – 1-2 cups
  • cardamom Powder – 1 tsp
  • salt – a pinch

How to make Almond and Date Energy Bites

  1. Take 2-3 cups of water in a vessel and bring it to boil. Pit the dates and lay them in a sieve. Place this sieve on top of boiling water to soften the dates.
  2. Stir until pulpy. This will take about 8-10 minutes. Remove from flame and add this to food processor along with cardamom powder, salt and almonds.
  3. Pulse until the mixture turns into dough consistency. Remove into a bowl and wrap. Refrigerate for 30 minutes.
  4. Divide the mixture evenly using a tablespoon and roll into balls. Gently swirl in coconut powder and set aside. Relish!
