Ingredients to make Ringana No Olo

  • 700 gms Brinjal
  • 200 gms spring onion Chopped
  • 100 gms spring onion Leaves
  • 100 gms onion Chopped
  • garlic 20-25 Cloves
  • tomato 2 Meduim
  • red chilli Powder 3 tsp.
  • turmeric Powder 1 tsp.
  • coriander Powder 1 tbsp.
  • salt to taste
  • Chopped coriander 1/2 Cup
  • oil 3 tbsp.
  • asafoetida 1 Pinch
  • cumin Seeds 1 tsp.
  • Whole red chilli 1 Piece
  • ghee 2 tbsp.
  • Bajri Na Rotla Jaggery buttermilk & Green Chilli to Serve

How to make Ringana No Olo

  1. Roast brinjal on gas stove or microwave till it gets soft and the outer skin gets black. Remove the skin and mash the brinjal.
  2. Grind garlic and red chilli powder together into a fine paste.
  3. Heat oil in a pan. Add cumin seeds and asafoetida to it. Add garlic and chilli paste to it and roast the paste properly.
  4. Add spring onion and onion to it. Let it cook for 3-4 minutes. Add spring onion leaves and let it cook for 2 minutes.
  5. Add chopped tomatoes. Add turmeric powder, coriander powder and let the mixture cook till it leaves oil on the sides.
  6. Add the brinjal paste to it. Add salt according to taste and let it cook for 5 minutes.
  7. Heat ghee in a pan and add whole red chillies to it. Add the ghee along with red chilli over the brinjal gravy and cover immediately. Turn off the flame.
  8. Take this in a serving dish and garnish with chopped coriander and the whole red chillies.
  9. Serve the Ringana No Olo along with Bajri Na Rotla, jaggery, buttermilk and sauteed green chilli.

My Tip:

Chop green chilli. Add oil in pan. Add turmeric powder, coriander powder, salt to it and add green chillies. Cover for 2 minutes. Sautéed green chillies are ready to serve.
