As now a days people are looking for healthy food options.This Honeyoffee is a perfect choice for those who are counting on calories and wanted to have pure ice-cream,not the frozen desserts.Honeyoffee Ice-cream is a very healthy ice-cream,very good in taste and easy to make. Its a builing on recipe.For this icecream we need hopney caramel sauce,icecream mixture and nutty crunches.

Ingredients Serving: 8

  1. FOR HONEY CARAMEL SAUCE :
  2. Honey 1 cup
  3. Amul cream(room temperature) 3/4cup
  4. Unsalted Butter 1tbsp
  5. Vanilla extract/essence 1tsp
  6. FOR ICE CREAM :
  7. Full cream Milk 2 1/2cup
  8. Whipping Cream (thawed) 1cup
  9. CornStarch 2tbsp
  10. Honey Caramel Sauce 1/3cup
  11. Coffee 1tsp
  12. FOR NUTTY CRUNCHES :
  13. Sugar 1/2cup
  14. Honey 1 tsp
  15. Roasted Nuts(Walnuts/Cashew) 3 tbsp

Instructions

  1. Preparation of Honey Caramel Sauce :
  2. In a non-stick pan ,take honey and heat at medium low flame.Once the bubbles start forming at surrounding,switch of the flame.Add cream and butter and mix it well.Keep aside to get the sauce cools down.
  3. Preparation of Icecream Mixture :
  4. In a heavy bottom pan,boil 2 cups of milk at low flame.Boil the milk till it reduces to ¾.Stir continously,to prevent milk sticking to the bottom of pan.
  5. In rest of 1/2 cup of milk , mix 2 tbsp of cornflour.Mix it well so that there is no lump.Add this mixture to reduced milk and keep on stirring so that there is no lump.
  6. Boil at low flame for 2-3 mins and stopped the flame.Keep aside to cool down.When mixture is luke warm ,add honey caramel sauce and coffee .Mix it well and keep aside & let it cool down completely.
  7. Now start whipping cream at low speed .Add above prepared milk to cream slowly slowly while continously whipping the cream. Once it mixes well,stop whipping.
  8. Store it in airtight container and keep it in freezer for 3 -4 hrs or till it is soft set. After 3-4 hrs,take it out from the freezer and re whip it for 2-3 mins and again keep it in freezer for 8-10 hrs or till it sets properly.
  9. Preparation of Nutty Crunches :
  10. In a non stick pan,melt sugar at low flame.Do not stir the sugar in between.Once the sugar melts completely,switch off the flame.Add honey and roasted nuts.Mix it well and immediately pour the mixture on greased plate and spread it thinly.
  11. Let it cool down at room tempertaure.Once its gets cooled down ,you can easily take it out from the plate and use it as the topping.
  12. Garnish ice-cream with silver vark and nutty crunches.
